At La Vauvarée in Hermonville, a few steps from Laure and Fabrice's cellar, the Tonnellerie de Champagne-Ardenne keeps alive one of the finest crafts in wine. You follow the oak from forest to barrel: the selection in the woods, the stave-making, the fire that bends the wood, the vat-making, and you taste Champagnes aged in oak.
