Hautvillers is the cradle of champagne: it was here, at the Abbey of Saint-Pierre, that the monk Dom Pierre Perignon, cellarer from 1668 to 1715, perfected the art of blending. The abbey now belongs to Dom Perignon and cannot be visited, but the adjoining abbey church of Saint-Sindulphe, open year-round, holds his tomb. Around it, the village is best explored looking up, among its forty-odd wrought-iron signs and views over the Marne valley.
