At Taittinger the tasting is earned: you go eighteen meters underground, into chalk cellars first dug in Gallo-Roman times and listed by UNESCO, past the remains of the former Abbey of Saint-Nicaise. This is the setting where the house's signature cuvee matures, the Comtes de Champagne, a blanc de blancs made entirely from chardonnay.
Beneath the former Saint-Nicaise abbey, the Taittinger cellars extend old crayères, chalk quarries opened in Gallo-Roman times to build Reims. The house says its abbey cellars sit on chalk pits dating back to the Gallo-Roman era, and that chalk has been taken from the Saint-Nicaise hill since then. Benedictine monks built the abbey in the 13th century, and the Champagne houses later made these galleries their cellars.
